Kuku is the term used in Persia for egg based frittata type dishes and there are several versions to try. They make a very good picnic dish and can be served hot, warm or at room temperature. I used yellow courgettes in the version in the picture. The recipe is from ” Sirocco” by Sabrina Ghayour.

Loaded chips to enjoy when you are in newed of comfort. Instead of tuna you could load these with Salsa Roja and Pickled Onions or with Mexican Sauce and Spring Onion Salsa. You need a flat baking tray and you want to spread the potatoes out as much as possible to crisp and colour evenly. The recipe is fro ” Mezcla” by Ixta Belfrage.

More delicious scones from Claire Ptak’s ” The Violet Bakery Cookbook”. When I lived in London I used to love visiting her stall in Broadway Market on a Saturday morning to pick up some naughty but nice treats. You can also make the scones in advance, then freeze and bake as and when needed. The dough will keep in the freezer for up to a month.
