My local chef and food writer Claire Thomson published her latest book ” Tomato” last month and as always I have found so many recipes I want make . The chapter on salads has many good ideas for the unprecedented hot weather we are currently experiencing and this simple and refreshing salad is the first recipe I tried.
I recently had some of the best fresh crab i had eaten in Bridlington, Yorkshire but Cornish crab is equally good. Fresh crab is at its very best from April to October and this recipe from ” Sea and Shore” by Emily Scott is a simple but delicious way to serve it.
A delicious side from Claire Thomson’s excellent ” Home Cookery Year”. Use the ripest tomatoes or you can use two 400g cans of drained plum tomatoes as an alternative. Serve warm or at room temperature.
