Fennel and Sausage Muffins ( makes 12)

These muffins make a great snack on their own but are also good to accompany soup. The recipe is from ” Stirring Slowly” by Georgina Hayden.

Another sausage recipe from the excellent ” Cook Simple” by Diana Henry. She describes it as her ” lazy person’s substitute” for cassoulet.
