This Thai inspired curry is from Nigella Lawson’s ” Nigella Express” and should be served with plain rice or noodles. You can add more coconut milk for a soupier dish , and perhaps toss in some toasted chopped unsalted peanuts if you have them.
This is a seasonal Lindsey Bareham recipe which I found in Ruth Watson’s ” Fat Girl Slim”. If you are not losing weight you could tear in some ciabatta bread, or serve accompanied by new potatoes.
Another Bangladeshi recipe from Rick Stein’s ” Far Eastern Odyssey”. They would use a local river fish could Rui, but you have to adapt to what is available. A firmer fish works best, other fish can be used but may break up a bit during cooking.
