Wild Garlic Macaroni Cheese (6)

I love foraging for wild garlic on my local walks and am always looking for new ways to use it. This green and cheesy pasta from Thomasina Miers is also a great way to use up odds and ends of different cheeses- the more variety the better. If you like crisp pancetta or melted anchovies can be added to the sauce. If wild garlic is hard to find then bulb garlic can be used instead and wilted spinach or kale added for colour.

A luxurious version of Macaroni cheese from ” The Seafood Shack ” by Kirstie Scobie and Fenella Renwick. I visited Ullapool in the 1980s but this makes me want to return to try out the original version and other good things this restaurant serves.

Park Farm in Kelston is the home of the Bath Soft Cheese Company and I will always call in there- usually for an ice cream- if walking in the area. This recipe uese the lovely cheeses they make which you can buy there and in local farmers markets. I found the recipe in ” The Bristol and Bath Cookbook”

Alpine Macaroni Cheese (4)

I am clearly on a Mac n Cheese roll today which probably means i need some comfort food. Here is a version from Felicity Cloake. Now i will let you in on a little secret for those who share my love of the better versions of this dish. . If you live in or near Bristol then there is a van which sells yummy Mac n Cheese called Alp Mac- usually at least three or more versions. Crab Mac ‘N’ Cheese (2)

Today I braved the Lockdown queue outside our local Waitrose (since I cant get a delivery for love nor money) . Picked up this recipe while in store- comfort food at its best.If preferred you can make the macaroni mixture ahead, add the crab to the mixture when ready to cook and then bake at 180 C Gas 4 for 30 minutes.

Wild Mushroom Macaroni Cheese (4)

Macaroni Cheese is great comfort food even if it usually blows the diet.  The basic recipe can sometimes  benefit from enhancement. This is my slightly  simplified version of a recipe by Jimmy Garcia aka  ” London’s Pop Up King”. Who would have thought this would be back on restaurant menus!

Oyster mushrooms, or other mushrooms can be used instead of wild mushrooms if preferred.
