Scrambled Paneer Curry (4)

A delicious paneer recipe to make at home from ” Romy Gill’s India ” by Romy Gill. She says its also a great choice for packed lunches or summer picnics: cut a pitta in half, turn each half into a pocket and fill with paneer to enjoy with pickled onions and salad on the side. She also suggests you can eat this paneer in a wrap, along with sliced onions and the chutney of your choice.

This recipe is from my very well thumbed and stained copy of ” Madhur Jaffrey’s Indian Cookery”. This was the first Indian cookery book i bought, but one i still return to regularly. You can make this in advance and reheat if you like.

When i was a student almost 40 years ago there were very few  vegetarian cookbooks around. In the UK the standard was Rose Elliots ” Not just a Load of Old Lentils” published in 1972- I still have my battered and coverless copy. This was a dish for highdays and holidays, including  Christmas Dinner.
