A very good fish soup from Trine Hahnemann.You do need a good stock, so allow plenty of time to prepare this and sweettalk your fishmonger into giving you the fishbones!
This is Thomasina Miers version and I cannot think of anyone better to turn to for a definitive recipe. If you cannot get hold of chipotles en adobe mix two tablespoons of tomato puree or ketchup with a tablespoon of hot smoked pimenton and add dried chillies to taste. Make this the day before if you can as the flavour will be much improved the next day.
Another recipe from Claire Thomson’s ” Home Cookery Year” which was so good i cooked the same again for myself the next day. The Pommes Anna would go with other recipes too, and this is an easy way to make them in the oven rather than on the hob.
