Chilli Paneer(4)

I needed to use up some paneer yesterday so i cooked this simple and yummy recipe from ” Chai, Chaat & Chutney” by Chetna Makan. I served it on a bed of puy lentils, but more traditionally it would be served with dal and rice, or perhaps a flatbread.

Asparagus and Cashew Stir Fry (2)

The first of the english grown Asparagus is now starting to appear in the shops and I am always looking for new ways to cook it. This is a super quick supper from Anna Jones that you can serve with rice or noodles. Make sure everything is prepared before you start frying.

You can replace the asparagus with some purple sprouting broccoli for a variation.

Black Bean Chilli (4)

A vegetarian chilli from the fast food restaurant Leon. I think black beans or kidney beans work best but white beans could also be used if thats all you have in the cupboard. Serve it with rice or jacket potato. You can add a number of optional extras such as soured cream, tomato salsa, guacamole and grated cheese.
