Ful Medames (4)

A spicy bean stew which is often eaten for breakfast throughout the Middle East and North Africa. In 1980 I spent a month in Egypt staying in youth hostels and with very little money, and this is what we ate, daily. This version is from ” The Little Book of Brunch” by Caroline Craig and Sophie Missing.

Red Mullet Soup (8-10)

This is really a French recipe but it is from ” Rhodes Around Britain” by Gary Rhodes. It should be served with Garlic Toasts with Rouille. To make the garlic toast cut a french stick into 1 cm slices and spread with some garlic butter. Toast the slices then top with Rouille.

Prince Prawns (6)

A recipe from Rosamund Grant’s ” Caribbean and African Cookery”. Many years ago she provided the catering for a Prince (RIP) tour and this dish was often requested, hence the name. Serve with rice or cornbread.
