This is a recipe from ” Real Food” by Nigel Slater. Serve with a spinach salad.
Ingredients
- 4 baked potatoes
- 100 g pancetta, cubed or use diced streaky bacon
- 150 g double cream
- 100 g gorgonzola, diced

Instructions
- Fry the pancetta until its fat is golden using a little butter or oil if needed.
- Stir in the cream and cheese and leave to bubble gently over a moderate heat for a minute or two.
- Split the potatoes then spoon in dollops of the creamy sauce and serve with a spinach salad.
