A spicy Indian salad from Asma Khan to serve with Raan Lamb or curries.
Ingredients
- 225 g Cucumber cut into ½cm cubes
- 225 g tomatoes cut into ½cm cubes
- 100 g oz red onions cut into ½cm cubes
- 50 g pomegranate seeds
- 2–3 green chillies finely chopped
- a pinch salt
- 4 tbsp lime or lemon juice
- fresh mint sprigs to garnish

Instructions
- Mix the cucumber, tomatoes, onions, pomegranate seeds and chilli together in a large bowl. Season with salt, then dress with the lime or lemon juice. Serve immediately, garnished with a few fresh mint sprigs.
