A prawn curry from Manju Malhi. This goes well with a yellow split pea curry and a green bean dish.
Ingredients
- 2 tbsps vegetable oil
- 1 onion peeled and finely chopped
- 2 plump garlic cloves peeled and crushed
- 1/4 tsp salt
- 1/4 tsp turmeric
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/4 tsp Chilli powder
- 2 tsps tomato puree
- 150 g raw peeled king prawns
- pinch garam masala
- fresh coriander leaves washed and finely chopped

- Heat the oil in a frying pan, add the onion and fry until it is golden brown or caramalised- this should take 8-10 minutes.
- Add the garlic, salt, turmeric, cumin, coriander, chilli powder and tomato puree and stir for 30 seconds then tip in the prawns and stir fry for 2 minutes.
- Add 65 ml water and cook for a minute more. Remove from the heat and sprinkle over the garam masala and the coriander leaves.
