An unforgettable Greek way with potatoes from Nigel Slater’s ” Real Good Food”.
Ingredients
- 4 medium potatoes thinly sliced
- 1 plump clove garlic
- 2 tbsps olive oil
- 2 fresh bay leaves
- juice of 2 large lemons

Instructions
- Preheat the oven to 200 C, Gas 8.
- Put the potatoes in an ovenproof dish. Squash the garlic clove and add it whole.
- Pour over the olive oil and lemon juice then add the bay leaves, a little salt and plenty of black pepper.
- Bake for about an hour until soft and slightly crisp on top, stirring once or twice during cooking.
