A favourite pasta dish from ” Eat” by Nigel Slater.
Ingredients
- 200 g dried linguini
- 2 cloves garlic peeled and crushed
- 5 tbsps olive oil
- 200 g peeled brown shrimps
- a large handful chopped dill
- sea salt and black pepper
- grated zest and juice of a lemon
- 1 tbsp Noilly Pratt or dry white vermouth

Instructions
- Put a large pan of water on to boil then salt in generously. When the water boils add the pasta and cook according to packet instructions until al dente.
- Meanwhile, heat the oil over a lowish heat in a small pan and add the garlic. Fry briefly then add the shrimps and dill and season. Add the lemon and Noilly Prat, bring to the boil then remove from the heat.
- Drain the pasta then tip in the shrimp mixture and toss gently together. Serve immediately.
