A delicious dessert from Nigel Slater.
Ingredients
- 2 medium very ripe mangoes
- juice of 1/2 a lime
- 1/4 pint double cream
- 5 oz thick greek yoghurt
- 6 ripe passion fruit

- Peel the mangoes and cut into large chunks. Liquidise with the lime juice in a blender, adding more if needed.
- Whip the cream until it starts to thicken but stop well before it stands in peaks.
- Slice two of the passion fruit in half and rub them through a strainer to extract the juice.
- Gently but thoroughly stir the cream, mango puree and passion fruit juice into the yoghurt.
- Spoon into small wineglasses and chill for up to an hour.
- Just before serving cut the remaining passion fruit in half and squeeze the seeds and pulp on top of each fool.
