Ingredients
- 1 large red pepper
- 1 large ripe mango
- juice of 1/2 lime
- 1 small red onion peeled and finely chopped
- 1 tsp sugar
- 1/2 inch fresh root ginger peeled
- 1 small fresh red chilli deseeded and finely chopped
- 1 tbsp freshly chopped coriander

- Halve and deseed the pepper then grill skin side up until the skin chars. Remove from the heat and leave to cool, then peel away the skin. Finely chop the flesh.
- Peel the mango and cut the fresh into very small dice. Place in a bowl with the peppers and lime juice then add the onion and sprinkle with the sugar.
- Grate the ginger and stir in then add the chillies and stir again. Set aside for 15 minutes.
- Stir in the coriander leaves just before serving.
