A salsa to serve with meat or fish from Nigel Slater.
Ingredients
- 2 large small ripe mangoes
- 1 " piece fresh ginger
- 1 small hot red chilli deseeded and chopped
- sea salt to taste
- 1 tbsp chopped mint leaves
- 1 tsp ground cumin
- juice of a lime

Instructions
- Peel the mangoes and cut the flesh into small dice, reserving the juice.
- Grate the ginger finely and mix with the chopped chilli, mint and ground cumin.
- Mix the seasonings gently with the mango. Add salt and squeeze in the lime juice.
- Chill thoroughly before serving with grilled meat or fish.
