Mexican Winter Salad (4)

A light and refreshing starter or side salad which goes well with grilled chicken or fish. It’s from ” Wahaca Mexican Food at Home” by Thomasina Miers.

  1. Whisk the dressing ingredients together and set aside.
  2. Cut the peel and pith off the oranges. Slice the flesh thinly and put into a large bowl with all the other salad ingredients apart from a few of the Totopis and Pomegranate seeds.
  3. Pour in the dressing and mix gently. Scatter the reserved Totopos and pomegranate seeds over the salad before serving.
