A Swiss recipe from ” Eat Drink Live” by Fran Warde. For a vegetarian version you can replace the ham with some mushrooms.
Ingredients
- 4 tsps olive oil
- 4 large cooked potatoes sliced 2.5 cm thick
- 200 g smoked ham chopped
- 4 1 cm thick slices Emmenthal cheese or 100g grated Emmenthal
- 4 free range eggs
- sea salt and freshly ground black pepper
- chopped flat leaf parsley tpo serve optional

Instructions
- Heat 1 tsp oil in each of 4 small frying pans. Add the potatoes and cook for two minutes on each side. Stir in the ham.
- Crack an egg into each pan. Top with the sliced or grated cheese, sprinkle with salt and pepper and cook for 2-3 minutes until the egg is just set and the cheese is beginning to melt.
- Serve sprinkled with the chopped parsley, if using.
