A Kashmiri recipe for mushrooms from ” A Taste of India” by Madhur Jaffrey.
Ingredients
- 12 oz fresh mushrooms
- 4 tbsps vegetable oil
- 6 oz smallish tomatoes chopped
- 1/4 tsp ground fennel seeds
- 1/4 tsp ground ginger
- 1/4 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1/2 tsp sea salt

Instructions
- Wipe the mushrooms with a wet cloth and cut into 1/4 inch slices.
- Heat the oil in a frying pan over a medium high flame. When very hot put in the mushrooms. Stir and fry for about 2 minutes.
- Add all the other ingredients then stir and cook until the tomatoes are soft.
