Seasonal Mushrooms with garlic. You can use wild mushrooms or a mixture of wild and field mushrooms depending on availability and price.
Ingredients
- 300 g mushrooms
- 8 tbsps olive oil
- 3 plump cloves garlic peeled and finely chopped
- 1 tbsp fresh flat leaf parsley finely chopped
- 1 tsp fresh thyme leaves
- splash of white wine
- sea salt and freshly ground black pepper

Instructions
- Trim the mushrooms and wipe clean with a damp cloth.
- Heat the olive oil in a large frying pan and fry the mushrooms for a couple of minutes. Season,then turn over. Fry for another couple of minutes.
- Add the chopped garlic and parsley and continue to cook for another two minutes, then add the thyme sprigs and wine.
- Set light to the pan with a long match and let it flambe for about 30 seconds before serving.
