An easy brunch or supper from ” Butter” by James Martin.
Ingredients
- 150 g butter softened
- 150 ml dark soy sauce
- 2 cloves garlic peeled
- a few sprigs coriander chopped
- 4 spring onions trimmed and sliced
- 1 red chilli deseeded and diced
- 4 large field mushrooms

Instructions
- Place the butter, soy sauce, garlic and coriander in a mini food processor and blitz until smooth. Spoon into a bowl then fold through the spring onions and chilli.
- Remove the stalks from the mushrooms, chop them up and fold them through the butter.
- Fill each mushroom with the butter mixture then grill for 8-10 minutes, or until cooked through.
