An easy recipe for new potato salad.
Ingredients
- 1 lb new potatoes
- 4 spring onions trimmed and finely sliced
- 6 tbsps ready made mayonnaise
- sea salt and freshly ground black pepper
- 3 sprigs fresh mint leaves

Instructions
- Wash, scrape or scrub the potatoes and place in a pan of cold salted water with the mint. Bring to the boil and boil for 10-15 minutes until tender when pierced.
- Drain the potatoes and slice while still hot.
- Tip the potatoes into a serving bowl and add the mayonnaise and spring onions, stirring gently to combine. Season to taste and set aside to cool before serving .
