Another easy recipe for sausages from Fiona Beckett.If fresh garlic is available you can use a whole head of this instead of the garlic cloves . This is nice served with a green salad but if you prefer you can make gravy.
Ingredients
- 450 g new or waxy potatoes scrubbed
- 2 medium red onions
- 4-5 plump garlic cloves
- 3 tbsps olive oil
- sea salt and black pepper
- 6 good quality lamb or pork sausages

Instructions
- Preheat the oven to 200C Gas 6.
- Cut the potatoes into chunky slices about 4 cm thick and peel and thickly slice the onions and garlic.
- Put the vegetables in a medium sized roasting tin with 3 tbsps olive oil. Season with the salt and pepper and mix together well.
- Roast for 20 minutes then turn the vegetables over. Put the sausages on top, turning to get a light coating of the oil.
- Return to the oven and cook for 15 minutes more then turn the sausages over and cook for a final 15-20 minutes.
