An easy pasta recipe from ” Simple Food” by Jill Dupleix.
Ingredients
- 350-400 g dried orecchiette
- 2 red chillies finely sliced
- 2 plump garlic cloves peeled and finely sliced
- 2 tbsps extra virgin olive oil
- 300 g rocket leaves
- 400-450 g dried orecchiette
- a handful freshly grated parmesan

Instructions
- Put the pasta into a pan of boiling salted water and cook according to packet instructions until al dente.
- Meanwhile gently heat the oil in a big frying pan and add the chillies and garlic. Cook over a gentle heat for a couple of minutes, then add the rocket leaves and toss until wilted.
- Add the drained pasta and toss well. Serve scattered with the parmesan.
