Ingredients
- 250 g orzo pasta
- olive oil
- 2 garlic cloves crushed
- 3 tablespoons tomato puree
- 400 g can black-eyed beans drained and rinsed
- 1 small packet flat leaf parsley finely chopped, about 30g
- 1 small packet dill finely chopped, about 30g
- 1 small packet fresh coriander finely chopped, about 30g
- 1 small packet chives thinly sliced, about 30g
- Juice of ½ a lemon
- Maldon sea salt flakes and freshly ground black pepper
- ground black pepper

Instructions
- Cook the orzo in a large saucepan of salted boiling water according to the packet instructions, then drain and return to the pan, but turn the heat off.
- Drizzle generously with olive oil and add the garlic and tomato purée, then work into the orzo until evenly combined. Season well with salt and pepper and add the beans, chopped herbs and lemon juice and mix well.
- Taste and adjust the seasoning if desired, then serve.
