An easy snack or dinner from ” Cook As You Are” by Ruby Tandoh.
Ingredients
For the Peas:
- 100 g frozen peas
- 1/2-1 tbsp lemon or lime juice
- 2 tsps olive or vegetable oil
- 1/4 tsp chilli flakes to taste
- a few fresh mint leaves roughly chopped
- a few fresh corander leaves roughly chopped
- a good pinch salt
To Serve:
- 2 slices bread
- olive oil
- 1 garlic clove halved

Instructions
- First prepare the peas. Soak in a bowl or jug with %00 ml of freshly boiled water for 5 minutes.
- While the peas soak prepare the paneer. Heat the oil in a small frying pan over a medium heat. Add the grated paneer and fry, stirring often, for 3-4 minutes. Transfer to kitchen paper to drain.
- Drain the peas and mash very well with a fork or pulse briefly in a food processor or blender- you want it coarsely textured. Stir in the lemon or lime juice, oil, chilli flakes and torn mint and coriander. Season with salt to taste.
- Toast the bread, then drizzle with some olive oil and rub a cut side of garlic over the bread. Top the bread with the peas and then finish with the crispy paneer.
