Ingredients
- 1 large papaya
- 2 tbsps roasted peanuts
- 1/2 small red chilli deseeded and finely chopped
- 1 tbsp chopped fresh coriander
- 1 medium tomato deseeded and finely chopped
- a little sugar
- 1 tsp thai fish sauce
- juice of 1/2 lime

Instructions
- Cut the papaya in half and scoop out the seeds. Cut the fruit into thin matchstick like strips.
- Gently stir in the peanuts, chilli, tomato and coriander.
- Add sugar, fish sauce and lime juice to taste,
- Serve immediately.
