This recipe from Angela Hartnett is very good served with Orecchiette or Conchiglioni pasta.
Ingredients
- 500 g frozen peas
- 50 g parmesan grated
- 150 ml olive oil
- zest and juice of 1 lemon
- 50 g toasted pine nuts
- 1 tbsp freshly chopped mint
- 1 tbsp freshly chopped basil

Instructions
- Add the frozen peas to a food processor and pulse to break up – you want half of them a bit bashed and half fully broken down.
- Transfer the peas to a large bowl and allow them to defrost.
- Add the rest of the ingredients, season to taste and stir until combined.
