Ingredients
- 4 tbsps extra virgin olive oil
- 225 g shelled peas
- 1 small onion peeled and thinly sliced in rings
- 1 small red chilli pepper deseeded and chopped
- 2 sprigs mint

Instructions
- Put the oil in a heavy based pan and add the peas with 1 tablespoon of water.
- Stir in the onion, chilli and mint and simmer for 10-12 minutes, shaking the pan from time to time.
- Serve as a side dish or as a sauce for pasta.
