An easy supper from Nigel Slater’s ” The 30 Minute Cook”.
Ingredients
- 275 g dried Penne or similar
- 350 g marinated bottled baby artichokes
- 2 tbsps a little olive oil
- a handful coarsely chopped flat leaf parsley
- 4 tbsps grated parmesan cheese

Instructions
- Cook the pasta according to packet instructions until al dente.
- Drain the artichokes of their vegetable oil and cut them in half .
- Drain the pasta and toss with the artichokes, olive oil, parsley and Parmesan. Easy!
