Another way with spinach from Sybil Kapoor’s ” Simply British”.
Ingredients
- 1 shallot peeled and finely diced
- 1 tbsp sherry vinegar
- 5 tbsps extra virgin olive oil
- sea salt and black pepper
- 1 1/2 lbs baby spinach
- 2 plump garlic cloves peeled and crushed

- Whisk together the shallot, sherry vinegar, 3 tbsps of the extra virgin olive oil, sea salt and pepper. Set aside.
- Bring a large pan of salted water to the boil and add a third of the spinach. As soon as it wilts remove from the water with a slotted spoon and cool under cold running water. Cook all the spinach this way, then squeeze out as much excess water as you can.
- When ready to serve heat the remaining 2 tbsps of the oil in a saucepan and lightly fry the garlic. Add the spinach and stir fry until hot.
- Rewhisk the dressing and mix into the spinach. Check seasoning and serve immediately. If desired you can add finely shredded fresh mint.
