Delicious plums from ” Organic” by Sophie Grigson and William Black. Serve cold with cream, and some extra sugar or honey on the table for those who like their fruit a little sweeter.
Ingredients
- 1 kg plums halved and stoned
- 1 litre dry cider
- 1 cinnamon stick
- 175 g caster sugar

- Preheat the oven to 150 C, 140 Fan, Gas 2. Arrange the plums in a snug single layer in a roasting tin.
- Put the cider, cinnamon stick and sugar in a saucepan and stir over a moderate heat until the sugar has dissolved.
- Bring up to the boil and simmer for 10 minutes to make a light syrup. Pour over the plums and place in the oven while still hot.
- Bake for 20-35 minutes depending on the ripeness of the plums, basting once or twice as they cook, until very tender.
- Lift the plums out with a slotted spoon and pile into a shallow serving dish. Put the roasting tin on the hob and boil the juices hard until reduced by about half.
- Pour over the plums and leave to cool. Serve cold with cream.
