Ingredients
- 750 g plums or apricots
- 4 tbsps caster sugar or to taste
- 4 cloves
- half a cinnamon stick
- 3 fresh bay leaves

Instructions
- Halve and stone the fruit putting it into a saucepan as you go. Add the sugar and 6 tbsps water, cloves, cinnamon and bay then bring to the boil.
- Lower the heat and let the fruit simmer gently for 10-20 minutes depending on the ripeness. Remove from the heat once it is soft and easy to crush with the back of a spoon.
- Pour into a bowl and set aside to cool.
