Patatas a Lo Pobre is a Spanish recipe which translates in English to Poor Mans Potatoes. These go well with any meat or fish dish.
You want to use a variety like Maris Piper or King Edward.
Ingredients
- 1 large spanish onion peeled and thinly sliced
- 4 medium potatoes cut into 1 cm slices
- 1 large green pepper deseeded and thinly sliced
- 2 tbsps sherry vinegar
- 200 ml olive oil
- sea salt and black pepper

Instructions
- In a bowl mix the potatoes with the onion and pepper. Season with the salt, pepper and vinegar.
- Heat the olive oil in a large frying pan over a medium heat and add the potato mixture. Cook for about 20 minutes, turning from time to time. The vegetables should be soft but not too crispy.
- Serve immediately.
