Ingredients
- 450 g potatoes peeled and cut into large chunks
- 4 heaped tbsps duck fat
- 4 plump cloves garlic

- Put the potatoes, garlic and duck fat into a deep sided shallow pan.Cover with a lid and cook over a medium heat for about 25 minutes until tender.
- Pour off most of the fat, increase the heat and season with salt. Continue cooking, uncovered, to crisp the potatoes lightly here and there and serve immediately.
