A tasty soup from ” The Vietnamese Market Cookbook”. It calls for Gia which can usually be brought in Oriental Supermarkets but is easy to prepare at home. Mix 2 parts sugar, 1 part sea salt, 1 part ground black pepper and 1 part garlic powder. Store in a jar.
Ingredients
- 200 g raw peeled prawns coarsely chopped
- 200 g chunk of marrow or use courgettes
- 1 tbsp vegetable oil
- 1/2 tsp crushed garlic
- 750 ml hot water
- 1 tsp Gia
- 2 tbsps fish sauce
- 1 tbsp chopped spring onion
MARINADE
- 1 tsp ground black pepper
- 1 tbsp fish sauce
- 1/2 tsp chopped garlic

- Combine all the marinade ingredients and pour over the prawns. Cover and leave to marinate for a few minutes while you prepare the marrow.
- Peel the marrow, cut in half lengthways and remove any seeds. Use a vegetable peeler to slice the marrow into thin slices of about 1mm.
- Heat the oil in a heavy bottomed pan then stir in the garlic until the oil is fragrant. Add the marinated prawns and stir quickly until they turn pink.
- Pour in the hot water and bring to the boil, skimming off any foam. Season with the Gia and the Fish Sauce then add the marrow slices and cook for about 5 minutes until soft.
- Remove from the heat and sprinkle with the chopped spring onion to serve.
