Another old favourite from “Madhur Jaffrey’s Cookbook”. Serve with rice and a vegetable to accompany.
Ingredients
Sauce
- 4 tbsps tomato puree mixed with enough water to make 1 cup tomato sauce
- 1 cup single cream
- 1 1/2 tsps grated ginger
- 1/4 tsp cayenne
- 4 tsps lemon juice
- 1 tsp ground cumin
- 1 tsp a little sea salt
- a little black pepper
- 1/2 tsp sugar
Main
- 3 tbsps sunflower oil
- 1 tbsp yellow mustard seeds
- 2 plump cloves garlic peeled and finely chopped
- 2 lb raw prawns peeled
- sea salt and black pepper

Instructions
- Mix all the ingredients for the sauce. Cover and refrigerate until needed.
- When you are ready to eat heat the oil in a large frying pan over a medium high heat. When hot, put in the mustard seeds and , as soon as they begin to pop, the garlic.
- Stir once and add the prawns. Stir and fry until they just turn opaque, sprinkling with salt and pepper.
- Pour in the sauce and stir. As soon as the sauce starts bubbling the dish is ready to be served.
