A quick Thai supper from Nigel Slater.
Ingredients
- 2 tbsps groundnut oil
- 2 plump garlic cloves peeled and chopped
- 1 medium hot red chilli deseeded and sliced
- 6 lime leaves rolled and very finely shredded
- 24-30 medium raw prawns in their shell
- 1 tbsp thai fish sauce
- juice of a lime

Instructions
- Get a large wok really hot then heat enough oil to make a puddle in the bottom. When it gets really hot throw in the garlic and let it just brown, stirring.
- Add the chilli and the lime leaves and fry for a few seconds, then add the prawns. Stir fry for 4 minutes. If the prawns are already cooked then 2 minutes will suffice.
- Splash over the fish sauce and season with salt and pepper. Squeeze over the lime juice and eat immediately.
