A recipe from Rosamund Grant’s ” Caribbean and African Cookery”. Many years ago she provided the catering for a Prince (RIP) tour and this dish was often requested, hence the name. Serve with rice or cornbread.
Ingredients
- 2 lbs raw king prawns peeled
- fresh lemon juice
- 4 plump garlic cloves peeled and crushed
- 2 oz butter
- 2 tbsps olive oil
- 1 large onion peeled and sliced
- 6 medium tomatoes peeled and chopped
- 6 oz fresh spinach finely sliced
- 3 small slices fresh ginger
- 1/2 pint white wine
- 1/4 pint stock or water
- 2 fresh bay leaves
- 1 tbsp Worcestershire sauce
- 1 tbsp milk
- 1 tbsp brown sugar

- Peel and devein the prawns then rinse and drain well. Squeeze over the lemon juice and rub with half of the garlic. Cook the prawns lightly in the butter then remove and set aside.
- Add the oil to the butter and saute the onions until soft. Mix in the tomatoes and ginger and cook for 5 to 10 minutes then add the white wine, stock and remaining ingredients.
- Stir well and simmer for 20 minutes, adding a little water if needed. Serve with ice or cornbread.
