Rainbow Room Carrot Salad was served in the restaurant at the top of the Biba store in Kensington.
Ingredients
- 4 medium organic carrots peeled
- 75 g salted peanus
- 2 tbsps red wine vinegar
- 2 tbsps groundnut oil
- 1 tsp sesame oil

Instructions
- To prepare the carrots grate very coarsely or cut into skinny batons.
- Combine with the peanuts in a mixing bowl then add all the remaining ingredients and stir well.
