Spinach with Raisins and Pine Nuts (4)

  1. Pour boiling water over the dried fruit and set aside to plump up while you cook the spinach.
  2. Put the spinach into a large saucepan with a little boiling water and a pinch of salt. Cook for 2-10 minutes until wilted and tender then drain well, squuezing out excess liquid with your hands.Chop or shred.
  3. Heat the olive oil in a frying pan and gently saute the garlic for 2-3 minutes. Add the spinach, pine nuts and drained fruit. Season to taste.
  4. Cook gently for 5 minutes more, then serve with some croutons sprinkled over.
