Pour boiling water over the dried fruit and set aside to plump up while you cook the spinach.
Put the spinach into a large saucepan with a little boiling water and a pinch of salt. Cook for 2-10 minutes until wilted and tender then drain well, squuezing out excess liquid with your hands.Chop or shred.
Heat the olive oil in a frying pan and gently saute the garlic for 2-3 minutes. Add the spinach, pine nuts and drained fruit. Season to taste.
Cook gently for 5 minutes more, then serve with some croutons sprinkled over.
