Put the two sugars into a pan with the water and stir over a moderate heat until completely dissolved. Bring up to the boil and add the apples, raisins and a scraping of nutmeg.
Simmer very gently for about 30 minutes until the apple slices are very tender, Scoop them out into a shallow bowl with a slotted spoon and add another fresh rasping of nutmeg.
Boil the juices down for 3 or 4 minutes until syrupy then pour over the apples.
