Asian Style Slaw (4-6)
Ingredients

g
white cabbage
shredded

large
carrots
shredded with a julienne peeler or grated
1/2
medium
red onion
finely sliced
50
g
salted peanuts
chopped
a
large handful
coriander
chopped
a
large handful
mint leaves
chopped
DRESSING:
1
clove garlic
crushed
1
red chilli
finely chopped ( desseded if wished)

tbsps
lime juice
( about 2-3 limes)

tbsps
caster sugar

tbsps
fish sauce
2
tsp
rice vinegar
Instructions
Combine the ingredients for the dressing in a small bowl and stir, making sure the sugar is dissolved.
Put the cabbage, carrot and onion into a large bowl. Pour in the drsssing and toss well.
Place the slaw in a serving dish if using. Mix in the peanuts, coriander and mint and eat immediately.
