Banana Loaf Cake (8)

Instructions
Preheat the oven to 180 C and lightly grease a loaf tin or rectangular cake tin.
Add the sugar and bananas to a mixing bowl and mash well until pureed.
Add the oil, cinnamon, vanilla and nutmeg to the bowl and stir well.
Sieve the flour, baking powder, baking soda and salt into the bowl.
Fold the dry ingredients into the bowl carefully and evenly, ensuring they are well blended.Add the sunflower seeds, if using, and gently fold.
Tip the mixture into the greased tin and bake for 35-40 minutes or until risen and a golden brown colour.
When cooled, remove from the tin. Slice and serve warm or cold.
Store in a lidded container in the fridge or wrap in cling film.
