Instructions
  1. Preheat the oven to 180 C, 160 Fan. Bring a large pan of salted water to the boil and add the macaroni. Cook for 5 minutes and drain- the pasta should not be fully cooked through at this point.
  2. Meanwhile melt the butter in a saucepan over a low heat. When the butter is fully melted add the flour and stir continuously for 2 minutes, then add the milk a little at a time, continuing to stir.
  3. When all of the milk has been added gently cook the sauce for five minutes, stirring all the time until it has thickened.
  4. Remove the pan from the heat and add 150 g of the Wyfe of Bath and all the Bath Soft Cheese, stirring into the sauce until evenly distributed and beginning to melt. Taste the sauce and season with salt and pepper.
  5. Add the drained pasta to the sauce, stir to combine then pour into an ovenproof dish. Mix together the remaining Wyfe of Bath, the breadcrumbs and the finely chopped parsley and sprinkle over evenly. Bake in the preheated oven for 25 minutes until golden brown.
  6. Meanwhile make the garlic bread to serve with it . Combine the butter, chopped garlic and parsley then spread over the slices of sourdough. Put in the oven for the last 3-5 minutes of the macaronis cooking time.
  7. Serve the macaroni cheese with a couple of garlic bread slices per person.
