Blue Cheese and Tomato Crostini (4)
Ingredients

slices
sourdough bread
or 8 slices baguette

plump garlic clove

olive oil

g
blue cheese
2
tomatoes
sliced
sea salt and black pepper
Instructions
Toast the bread slices on each side and rub with the garlic, then sprinkle each slice with 1/2 tablespoon olive oil.
Crumble half the blue cheese with your fingers and divide it between the 4 slices of toast. Top with the sliced tomatoes in a single layer.
Cover with the remaining cheese and sprinkle with salt and pepper.
Cook the crostini under a hot grill, until the cheese melts and begins to brown lightly, about 4-5 minutes. Serve hot or warm.
