Chicken with Basil and Lemon (2)
Ingredients

free range chicken pieces
bone in
good fruity olive oil
2
plump garlic cloves
a lemon
1
large handful
basil
1
wine glass
medium dry white wine
Instructions
Season the chicken and put the pieces in a roasting tin. Pour over enough fruity olive oil to moisten them and make a shallow pool in the tin.
Squash the garlic in its skin and tuck it in with the chicken. Squeeze the lemon over the chicken and drop the empty shells in too.
Roast in a preheated oven 200 C Gas 6 for 30 minutes.
Tear up the basil leaves and toss them about a bit with the chicken. Return to the oven for 10 minutes.
Remove from the oven and pour over the wine. Put the roasting tin over a hot flame and let the wine bibble for 1 minute.
Serve with a green salad and some mashed potato.
