Chicken with Lime and Ginger (2)
Ingredients

free range chicken thighs
juice of 4 limes
2
stalks
lemon grass
trimmed and thinly sliced

small
hot red chillies
deseeded and chopped
1
inch
piece ginger
peeled and shredded
4
spring onions
trimmed and chopped
2
plump garlic cloves
peeled and finely chopped

honey
Instructions
Put the chicken pieces in a roasting tin. Cut slashes across the skin, cutting slightly down into the flesh.
Mix the lime juice, lemon grass, chillies, ginger, spring onions, garlic and honey together. Add 1 tsp salt.
Pour the marinade over the chicken pieces and rub it well into the slits. Set aside for about 2 hours, turning the chicken once in the marinade.
Heat the oven to 200 C, 180 Fan. Put the chicken in the oven and cook for 40-45 minutes until the chicken is golden and fragrant.
