Ingredients

lean minced beef

chopped organic tomatoes

fresh mushrooms

large onion
peeled and roughly chopped

400ml tins
red kidney beans
drained and rinsed

tbsp
olive oil
1
tsp
dried or fresh oregano
2
tsps
cumin
3
fresh red chillies
deseeded and chopped
Instructions
Heat the olive oil in a large saucepan and fry the onion over a medium heat for 3-5 mins until soft but not browned.
Increase the heat slightly and add the meat, breaking up with a wooden spoon. Cook until nicely browned all over.
Add the tomatoes, oregano, cumin, chillies, mushrooms and beans.
Reduce heat and simmer for about 15-20mins. You can serve immediately or set aside for a few hours for the flavours to develop.
